This is pretty tough. I thought Mastro's was a notch above Ruth's Chris (which has so far seemed much more casual and family oriented to me) but Mastro's prices are actually cheaper than Ruth's Chris.

Never been to Flemings but it loses points for being owned by the same company as Outback.

I went to Ruth's Chris like a week ago and their filet (medium rare) was very unimpressive. Completely flavorless. Their sides/desserts are unimpressive as well. The ribeye is top notch, however.

Ruth's Chris is my pick. I wouldn't say that they have the best steak, per se, but I like the way they cook it (it arrives hot), and I like their atmosphere. At this stage of my life, I really don't want a restaurant that tries to impress me with anything other than the food.

I haven't been to Morton's in 10+ years, but I wasn't overly impressed with it. I've been to Flemings at some point, but it wasn't memorable.

im not really into steak places as I am into BBQ but if I had to make a choice from there it would be Ruth's Chris

but If I had my own choice... there is a place in Anaheim off of Ball rd called the Ranch.... the food is good and they have a saloon next door. after hours they play country music and the women are hot...

CandyCanes, since you're in Orange County now, you have to try this place:

http://www.trabucooakssteakhouse.com/

You will probably freak out a little because it's VERY casual, very rustic, a little hokey, and nowhere near the water. In fact, it probably doesn't fit your mental image of Orange County at all (but fear not -- I think that's a GOOD thing). It's out in the canyons (not far from me, actually) and I don't think it's changed in the 40 years it's been around. They don't use electricity or gas to cook. Every day they start a mesquite fire to cook on.

Mine was the opposite. I sent back a $95 steak because they cooked it well done when I wanted medium rare.

I haven't eaten a great steak out in greater LA for maybe a decade or more. I can cook better steak at home than most places ever served me, and I can open my own wine for zero extra cost.

But among these chain names, I'd pick Morton's and Ruth's Chris as the most reliable ones in my experience, but none were excellent regularly. Mastro's BH was the most unpredictable in terms of hitting the cooking temps right for an entire group's items. For those prices, no excuses.

Sadly, We don't have anything on the level of, oh ... say Seattle's most excellent, The Metropolitan Grill. Might be worth a flight up there alone to eat there.

Taylors in K-town is a good deal as well.

That's weird. I always thought Mastro's was on a slightly higher level than Ruth's Chris/Morton's.

I see people getting into Ruth's Chris in T-shirts and jeans.

I've tried all those spots except Mastro's and they are all good except Cut, everyone else at the table that night thought I was nuts for not loving it though. I thought it was just so,so.

Nick & Stefs is great!

I just had a pretty good one at Pacific Dining Car the other day but my goto spot in the L.A. area is Taylors up in La canada flintridge. I Love that spot and always reserve it for special occassions or special females.

Smith & Wolinsky's is my favorite in Vegas.

Peter Lugers is a must in NYC.

They all get trumped though by the many backhouse smoker joints in Austin Texas imo.

Best I ever had EVER was at a backyard bbq in Hilo Hawaii.
I don't even know how to describe it, it was like beef flavored butter cuts.

The steak.

I really think it just depends on which cut you prefer. I've had every cut there and haven't walked away unhappy.

BTW, I know you said you're near there, but if you don't get down into the canyons -- there's also a Mexican restaurant right in the area, Rose Canyon Cantina: http://www.rosecanyoncantina.com/

Not great food, but I always enjoy going there for the patio dining.

I've eaten at all these places and it's a crime that Mastros only has one vote (me!). Cut comes closest, and everything else is miles behind. Morton lumped in there is a joke.

I've had Nick & Stefs and it was whatever to me. Again, to each their own, but I've had Omaha steaks in Omaha, dined at the overrated Peter Luger, and nothing compares to Mastros...

ps i've only had Mastros in BH, never costa mesa so i dont know if there is a difference in quality

I like Flemings the most of all the steakhouse chains because they have a good combination of quality meat and seasoning I like. Personally, I think Ruth Chris has crap meat - they hide it with all the butter. To me, Cut has the best meat, but its overpriced.

For most people, however, I imagine they would say Mastro's is the best. I've eaten at the Beverly Hills, Costa Mesa, Newport Beach and Las Vegas locations - all great. However, the only reason I keep going there is for the seafood tower. A bonus for going to the Newport location is you have a decent shot at seeing Kobe.

I was impressed with Craftsteak at the MGM in Vegas as well, but I suppose you are looking at chain restaurants.

How much is the seafood tower? That looks cool but I heard it runs $150.
