Not a lot of people are fond of offal. Mostly all barbacoa is made from cow tongue.

Unfortunately, Chipotle is about as authentic as it gets where I live. Having said that, I do like it a fair deal.

Sadly it's true. If you live in the middle of the country, it turns out Chipotle is a viable option when you need a burrito fix and don't feel like making it yourself. If I still lived in So Cal I doubt I would ever eat there.

Also true, we have a couple of food trucks here in beautiful Bloomington Indiana that are owned by real Mexicans. I'll always opt for them over a franchise place like Chipotle or Qdoba if they out and about.

A chain called taqueria 2 potrillos has been slowly growing in the IE. Assembly line ordering but authentic food with fresh made tortillas and real aguas frescas in a clean, modern place.

That in no way makes my statement any less true. Go ahead and put the greatest Chipotle in the entire franchise, the one that wins all the golden tortilla awards (or whatever corporate calls their awards) up against any hole in the wall mexican joint and they're still going to fall way short.
